Classic Jollof Rice
The iconic West African one-pot rice dish with rich tomato flavors.

Ingredients
- 3 cups long grain rice
- 400 g tomato paste
- 3 red bell peppers, blended
- 2 onions, diced
- 3 cloves garlic, minced
- 2 tsp curry powder
- 1 tsp thyme
- 2 cups chicken stock
- 1/4 cup vegetable oil

Rinse rice until water runs clear and set aside.

Heat oil in a large pot and fry onions until translucent.

Add tomato paste and blended peppers, cook for 15 minutes until oil rises to the top.
Tip: Stir frequently to prevent burning

Add curry, thyme, and chicken stock. Bring to a boil.

Add rice, stir well, cover and cook on low heat for 30 minutes.

Check rice, add more water if needed, and cook until tender.
