Egusi Soup
Rich and nutritious melon seed soup, a Nigerian staple.

Ingredients
- 2 cups ground egusi (melon seeds)
- 500 g assorted meat
- 2 cups spinach, chopped
- 1/2 cup palm oil
- 2 onions, diced
- 3 scotch bonnet peppers
- 4 cups meat stock
Instructions

Season and cook meat until tender, reserve stock.

Heat palm oil and fry onions and peppers.

Add ground egusi and fry for 5 minutes, stirring constantly.

Gradually add stock while stirring to avoid lumps.

Add cooked meat and simmer for 20 minutes.

Add spinach and cook for 5 more minutes.
